Rarely a person dies in sleep because of his sleep apnea disorder. But the most common causes of death are from the side effects of sleep apnea, like a stroke or a heart failure.
References :
http://www.sleep-apnea-guide.com/sleep-apnea-side-effects.html

Obstructive sleep apnea is diagnosed with a sleep study. Most insurances do cover this fully or partially. I am not sure where you heard that they didn't. If you do have sleep apnea, then this is treated with a special breathing machine called CPAP at night to reduce the apneic episodes. Talk to your doctor about this.
References :
Physician
